2 large eggs
200g of 00 flour, and some extra for dusting
Place 180g of flour on a large wooden board, leave the other 20g aside to use it whenever its necessary.
Shape the flour into a bowl like shape with a large hole in the middle and crack 2 eggs and pour them into the middle
of your "flour bowl".
Now using a fork, gently beat the eggs and mix the flour in with them a little bit at a time. Do not do this too quickly
so the walls of the flour don't break too soon and everything will spill out.
If the dough is too moist or you just feel like it, you can add the 20g of flour you have put aside at the start.
now using your hands bring everything together and work the dough for about 10 to 15 minutes until its smooth and elastic, after that you can wrap the dough in cling film and put it in the refrigerator for at least 30 minutes.
lightly dust a wooden board with flour, put the dough on the board and flatten it with a rolling pin.
Roll out the dough into thin sheets of pasta.
If you have a pasta machine at home you can divide the dough into 4 before you roll it out.
You can now roll the sheets up and cut into large strips. (about 0.75cm)
Now just unravel the cut pasta strips and twirl them into little nests and dust them lightly with flour to prevent them from sticking.
All you have to do now is cook your tagliatelle pasta in boiling salted water for about 5 minutes and it is ready to be served!
